If I ever put fancy stuff in the men's meatloaf they would throw me off the back deck (of course, it is only 3 feet off the ground, but still!).

One day I played round with my meatloaf recipe and got creative. I made individual loaves and covered each one in rolled oats. They all liked it so much that they even ate it without the usual smothering of tomato sauce. I should never have done it though because it was a such a hit that now they all expect a fancy version every time!

Might I humbly suggest that bacon and cheddar meatloaf might be more accurately called a terrine? (Or, worse still, brawn?) Hey, I collect every recipe book I can find that deals with retro, diner, roadhouse, truckstop, Elvis and '50s recipes - I love 'em. They're part of my whole mid-century modern thing I have going on. Unfortunately, my husband flat-out refuses to eat meatloaf, though, which is a legacy from his boarding school days when he insists the kitchen staff used to do unspeakable things to them. Or in them. He will eat rissoles (like your sloppy joes) reasonably happily, even though I have patiently explained to him that they contain the exact same ingredients, except they're smaller and cooked in olive oil. It's a pity, because I rather love the humble inventiveness associated with meatloaf construction. I'd love to put a dear little layer of boiled eggs in the bottom and a saucy arrangement of slivered almonds on the top to spell out "I peed in this", or something... Love, R xxx

I'd guess the bacon would be cooked and then layered in a loaf pan with shredded cheddars. Maybe layering in alternating directions (kind of checkerboardish) to give the construction more stability. Enough layers to give it some height. Then, in the oven just long enough to partially melt the cheese. And then, either unmold it (if possible - this might require some experimentation) or, just serve it from the loaf pan. Sounds kind of yummy. Served over something to hold it all together, like a flour tortilla or a kaiser roll!
